TACOKASE, a chef’s table experience highlighting seasonal ingredients from the Korean coast with a Baja twist.

It is the culmination of a 7-year journey, returning to where it all started. Back when I was still a pop-up chef at a friend’s bar in an up-and-coming neighborhood in Daejeon, I dreamt of opening a little shop slinging fish tacos like the ones back home in San Diego.

Over the last 7 years, I’ve cut my teeth in fine dining kitchens and honed my craft as a fishmonger up and down the California coast. Now with more experienced eyes, I’ve traveled back across the Pacific to explore the ocean’s bounties closer to my home away from home.

I’ve lost count of how many fish markets, farms, and fishermen I’ve visited since, how many new and different species of sea creatures I’ve encountered, and how greatly the seasonality differs in this corner of the ocean.

But here I am. Back in Korea. It is with great gratitude of heart that I present:
